Healthy Chicken Salad Recipe

This chicken salad loses calories but not flavor with a creamy mix of low fat mayonnaise and fat free sour cream. Walnuts give this healthy chicken salad a good dose of omega-3 and a nice crunch.

Ingredients

    • 4 boneless, skinless chicken breasts (4 oz each), baked
    • 1/3 cup reduced-fat mayonnaise
    • 2 Tbsp fat-free sour cream
    • 2 tsp lemon juice
    • 1/2 cup seedless red grapes, quartered
    • 1/4 cup walnuts, chopped
    • 1/2 cup chopped celery
    • 2 green onions, chopped
    • black pepper to taste
    • lettuce leaves for garnish

Preparation

    • With a knife, dice chicken breasts into bite-sized pieces. In a large bowl, combine chicken, mayonnaise, sour cream, lemon juice, grapes, walnuts, celery, green onions and black pepper. Toss gently. Serve on a bed of lettuce.
